The Peninsula Paris is pleased to announce the appointment of Tak Lau Yuen as Chef de Cuisine of its celebrated creative-Cantonese restaurant, LiLi.
An essential member of LiLi’s culinary team since the restaurant first opened in 2014, Chef Tak brings a wealth of culinary experience to his new post. In his role as LiLi’s sous-chef – a position he held for the past eight years – he was tasked not only with managing a kitchen brigade of 19 other cooks, but also with developing the restaurant’s creative French-Cantonese menu.
Chef Tak developed an early passion for the gastronomic arts. From the age of six, when his family first moved from Hong Kong to France and opened a restaurant, he watched and learned from his father, who was trained as a professional chef. After studying for a bachelor’s degree in International Trade, Chef Tak decided to undertake his own culinary education, and in 1996 he received a degree in Culinary Arts specialising in French cuisine. He further honed his craft working in numerous high-end restaurants in Paris and Macau before joining the LiLi team at The Peninsula Paris.
At LiLi, Chef Tak works closely with the hotel’s Executive Chef, David Bizet, to conceptualise delicious dishes that combine the culinary influences of France and China. Together, the duo has created inventive preparations such as the restaurant’s "four-handed Dim Sum selection"– which gives the traditional Chinese dumplings a Gallic twist with flavour combinations like beef bourguignon, bouillabaisse, artichokes barigoule, escargot, and chestnut truffle.
For Chef Tak, devising such dishes for LiLi is a way to bring together his most important creative inspirations from the past and present.
“In creating the LiLi menu, I have strived to honour the skills from my father, who showed me the complex and complementary refinements of Chinese cuisine, especially the culinary creations from Shanghai and Hong Kong” said Chef Tak. “But working with Chef David Bizet is also a powerful source of inspiration for me, and I hope that our collaboration can be seen, and tasted, right on the plate.” According to Vincent Pimont, General Manager of the Peninsula Paris, Chef Tak’s appointment as Chef de Cuisine marks the natural culmination of his years-long achievements at LiLi.
